Blogger A Continuous Lean, has dug up some wonderful photos from Life Magazine: Stork Club owner Sherman Billingsley's elaborate system of hand signals, used to alert staff to his customers needs (and more).

A left, Billingsley signals his staff that there is to be no check for this table. Obviously someone he likes. Other signals are for those doesn't.
